Cool off with this ultra-refreshing cucumber agua fresca that brings crisp garden flavors straight to your glass! With bright bursts of zesty lemon, aromatic mint, and just the right touch of sweetness, it is the ultimate thirst-quencher for warm, sunny afternoons.
Store any leftovers in an airtight glass pitcher or sealed jar in the refrigerator for up to 2 to 3 days, giving it a good stir before serving as natural separation will occur.
- 2 large cucumbers, peeled and chopped
- 1/4 cup packed fresh mint leaves
- 1/2 cup fresh lemon juice (about 3 to 4 lemons)
- 1/3 to 1/2 cup sugar or honey, to taste
- 3 cups cold water, divided
- 1 cup ice
- Optional: Pinch of salt
For the garnish:
- Fresh cucumber slices
- Fresh mint sprigs
Add the chopped cucumbers, fresh mint leaves, lemon juice, your choice of sugar or honey, 2 cups of the cold water, and the optional pinch of salt to a blender. Blend on high speed until completely smooth and liquefied. For a lighter, silky consistency, strain the blended mixture through a fine-mesh sieve into a large pitcher, discarding the excess solids. Pour in the remaining 1 cup of cold water, stir thoroughly, and taste to adjust sweetness if desired.
For the garnish: Fill individual serving glasses with the ice and pour the chilled agua fresca over top. Float fresh cucumber slices and tuck a sprig of fresh mint into each glass just before serving.
