Spicy and sweet, this summer recipe puts a spin on an old favorite!
6 freestone peaches, pitted and diced
1 pound tomatoes, diced
1/2 medium red onion, diced
2 tablespoon cilantro, chopped
Juice of 2 to 3 limes
1 to 3 jalapeños, chopped
Salt and pepper to taste
Toss ingredients in a bowl and add salt and pepper to taste. The amount of lime juice you use will need will be determined by the acidity of your tomatoes and peaches, which will be different each time. Taste as you go.
