Pomelos are very large citrus, somewhat like a grapefruit, with a lovely mild flavor and a very thick rind/pith. It is one of the oldest known citrus varieties. You'll find these big, beautiful citrus during the winter months at the farmers' market.
The skin, or rind, of the pomelo, can run from pale green to yellow, and the pith beneath the rind can be very thick. Depending on the variety, the segmented flesh may be pale yellow or pink. Perfect for adding a citrus splash to a salad without the bitterness.
