Apple Crisp

Serves 4 to 6

Crisp filling
• 7 small tart apples, peeled, cored, cubed
• 2 tablespoons sugar
• 1 teaspoon honey
• 1 tablespoon white wine or hard cider
• 1/4 teaspoon salt
• 1/4 teaspoon apple cider vinegar

• 1 stick of butter, cubed
• 1/4 cup walnuts, chopped
• 1/4 cup rolled oats
• 1/4 cup brown sugar
• 1/4 cup white sugar
• 1/4 teaspoon cinnamon
• 1/4 teaspoon salt
• 1/2 cup and 3 tablespoons flour


Preheat oven to 375°F.

Mix crisp filling ingredients in a bowl and let it sit
for an hour at room temperature. Strain the liquid; save for later.

Put the apples and mixture in an 8-inch square pan. In a separate bowl, mix topping
ingredients together, kneading until butter is mixed in thoroughly. Crumble
topping over the top and bake until brown and bubbling. Check after 30
minutes, but it will likely take 45 minutes to 1 hour.

Reduce strained liquid to a syrup in a saucepan and use it to top ice cream.
