Watermelon Feta Salad with Mint
Enjoy this refreshing salad as a side or main dish on a hot summer day. Easy to fix, delicious on the palate, this recipe will be your go-to summer salad!
6 cups cubed seedless watermelon
1/2 cup feta, crumbled
1/4 cup pickled red or torpedo onion, sliced into rings
1/2 cup red wine vinegar
12 mint leaves stacked, rolled and thinly sliced
1 teaspoon lemon zest
1 tablespoon lemon juice
3 tablespoons olive oil
Pickle your sliced onions a day in advance. (Pickled Red Onions) They will keep as pickles indefinitely.
Cube melon into bite sized chunks. Toss with onion, cheese, sliced mint, lemon zest and juice and olive oil. Taste before you salt. The amount of salt you want will vary with how salty your feta is.
