Spring Salad of English Peas, Favas, Asparagus and Sugar Snaps with Feta and Mint

 

 

 

 

Ingredients

Salad:

1 bunch of asparagus, peeled of the ends, blanched in salted water and shocked in ice water

1 lbs. of English peas, shelled, blanched in salted water and shocked in ice water

1 lbs.  of fava beans, shelled, blanched in salted water and shocked in ice water

20 sugar snap peas, trimmed of its ends and strings

20 leaves of mint

1 cup of green olives

Optional: sprigs of pea tendrils for garnish

Lemon juice to taste

Quality olive oil to taste

Kosher salt and freshly ground pepper to taste

 

 

 

 

Preparation

Display the veggies and the green olives on a chilled platter, dress with lemon juice, olive oil and season to taste.

Serve with feta cheese and torn pieces of lavash bread.
