Spicy Red and Green Pepper Jelly
A favorite piquant jelly for parties and gatherings because it is great appetizer as a topping with crackers and cream cheese.
1 cup red bell peppers, finely chopped
1 cup green bell peppers, finely chopped
1 to 2 jalapeno peppers, seeded, minced
1-1/2 cups apple cider vinegar
1/4 teaspoon pepper flakes
6-1/2 cups sugar
2 pouches liquid pectin
In a large pot, stir together bell peppers and jalapeno peppers, vinegar, pepper flakes and sugar. Bring to a boil over medium heat, stirring constantly. Boil for 5 minutes. Remove from heat and let stand 20 minutes, stirring occasionally.
Return to full boil over high heat, stirring constantly. Quickly add pectin, return to full boil and boil hard for 1 minute. Remove from heat, skim off foam. Stir for 5 to 8 minutes away from heat to prevent floating. Fill sterilized jars, add lids and rings; process for 5 minutes.
To test for floating, fill a jar and let stand for 1 minute. If peppers look like they’re going to start floating, pour jelly back in pot and stir, begin again with new sterilized jar.
