Spicy Peanut Vinaigrette

Great with chips, tacos, burritos and in our case, used as a spicy dressing for a tasty sandwich or salad.

Ingredients

  • 3 tablespoons olive oil
  • 1/2 cup roasted unsalted peanuts
  • 6 dried árbol chiles, stemmed (we also added a ½ ancho chile because we had some)
  • 8 black peppercorns
  • 3 cloves garlic, minced
  • 1 small white onion, halved
  • juice of whole lime
  • 1 tsp. kosher salt

Preparation

Heat an 8 inch skillet over medium heat, and add peanuts, chiles, peppercorns, garlic, and onion. Stir constantly, until onion is soft, about 10 minutes. Transfer to a blender and add olive oil, lime juice, salt and ½ cup water; blend until very smooth, about 2 minutes. Let cool and serve.
