Pomelo Salad with Coconut Chia Seed Dressing

You won't believe there isn't any dairy in this luscious and rich dressing!

Ingredients

1 pomelo, peeled or supremed

Mixed greens or baby greens

Toasted coconut for garnish

 

Dressing:

½ cup unsweetened canned coconut milk

3 tbs. chia seeds

Organic cane sugar to taste

Lime juice to taste (we used the extra juice from our supremed pomelo)

Kosher salt to taste

Freshly ground black pepper to taste

 

Preparation


Blend together and allow the chia seeds to bloom inside the dressing and in a refrigerator for 3 hours.  

Supreme or peel pomelo and cut into pieces or segments. Toss with salad greens, add dressing.

Taste, correct for seasoning and enjoy!

Makes 1/2 cup dressing, enough for 2 to 3 salads
