Pickled Red Onions

Ingredients

1 red onion

1-1/2  cups of vinegar

1 clove of garlic

Preparation

Slice red onion thinly, the thinner the onion, the quicker the pickle and place into a ceramic or glass bowl, do not use metal. Bring enough vinegar to cover the sliced onions to a boil, typical a cup and a half for one onion should suffice.  Once boiling liquid over onions and garlic and ensure submerged. Let sit until cooled to room temperature then place into a jar, cover, refrigerate, and use up to 10 days!  For softer onions, place into boiling vinegar 1 - 4 minutes prior to letting cool.
