Peach and Basil Shrub
Super refreshing and super easy. Be sure to try it for your next backyard gathering!
- 6 cups peaches, pitted and chopped
- 3 stems and leaves of basil, leaves chopped and the stems bruised.
- 3 cups Bakers’ Sugar (the small granules dissolves faster)
- 3 cups red wine vinegar
In a large jar or a food safe plastic container with a tight-fitting lid, combine the chopped peaches and sugar. Use the back of a wooden spoon or your hands to smash the fruit a bit. Cover and refrigerate. Wait for 24 hours to allow sugar dissolved––add the vinegar and the 3 stems of basil. Swirl and bruise the basil stems a bit, cover, and set back in the fridge for another 24 hours. We served ours shrub mixed with lots of ice and club soda.
