Oven Roasted Delicata Squash with Garam Masala, Tamarind Paste and Orange Blossom Honey

3 small delicata squash, de-seeded and cut into half moons
2 tbs. tamarind paste
3 tbs. water or more
Garam Masala, to taste
Orange blossom honey, to taste
Kosher salt and freshly ground black pepper to taste
Quality olive oil to taste
Preheat the oven to 375ºF.
Place parchment paper to cover the surface of a large hotel pan.
In a large bowl, mix the tamarind, garam masala, honey, olive oil, salt, pepper, and water to create a loose paste.
Toast the delicata squash in the bowl and coat well.
Place the hotel pan in the oven and cook until the squash has cooked through and has a good amount of blackened edges. Allow the squash to cool a bit and check for seasoning. Serve at once.
