Dried Figs with Honey & Walnuts

- 12 dried figs (From Alan Wilson Farm)
- 24 walnuts halves
- 2 tablespoons unsalted butter (We used Organic Pastures)
- Juice of 1 lemon
- 1/3 cup honey (Orange Blossom Honey from Alan Wilson Farm)
Trim stem from figs and slice each fig in half. Place cut figs on a platter, flesh side up. Press one walnut half into each fig as though it were a walnut shell. In a medium, non-stick sauté pan, melt the butter until it’s slightly browned; add the juice of 1 lemon. Add the honey and blend well.
Arrange the figs in the pan, walnut-side up and bring to a boil. Reduce the heat, cover the pan and simmer gently for 5-8 minutes or until the mixture is syrupy and the figs are glazed. Remove the figs to cool on plates or a serving platter, walnut side up. Use any extra sauce in the pan to dress the figs. Serve immediately.
