Buttered Crouton with Pureed English Peas

Ingredients

Buttered Croutons

1 Pain de mie, with the crust removed and cut into 6 large pieces

1 cube of quality unsalted butter, melted

1 stalk of spring garlic, washed and trimmed

Kosher salt to taste

 

English Pea Puree

1 lbs. English peas, shelled

1 bunch of spring onions

10 leaves of mint

1 cup of English Pea stock, rendered using the shells of the peas

1/3 cup of quality olive oil

Lemon juice and zest to taste

Water to thin to desired thickness
