Bubble and Squeak

- 2 tablespoons of olive oil
- ½ head of savoy cabbage, shredded and blanched in salted water
- 1 onion, finely sliced
- 3 cups of mashed potatoes
- 1 cup of mashed turnips
Add 1 tablespoon of olive oil in a non-stick pan, on medium high. Add the onion and salt. Next, add the sliced cabbage and allow the vegetables to sweat for 20 minutes. Set aside.
In a medium sized bowl mix the mashed turnips and potatoes with the onion/cabbage mixture. Check for seasoning (feel free to add spices or pepper flakes for heat.) Pre-heat the oven to 350 degrees.
Heat a non-stick pan (with oven safe handle) on medium high heat. Add 1 tbs. of olive oil and swirl the pan to coat the entire pan. Add the mixture and cook of medium-low heat for 10 minutes. Put the pan and mixture in the oven and cook for 20 minutes. Retrieve the hot pan with an oven safe mitt and flip the inner contain on a flat plate.
We garnished our “bubble and squeak” with ingredients from a traditional English breakfast and drizzled a little of Calolea's newly pressed olive oil, but feel free to add anything that sounds good to you.
