Coulis (koo-lee) is a thick sauce made from pureed fruits or vegetables. At the Concord Farmers' Market we made a blueberry coulis and added it to a salad dressing, which we served with arugula, toasted pecans, and macerated spring onions. It is also delicious added to yogurt, pancakes, waffles and ice cream.

- 1 pound of blueberries
- 2 tablespoons honey
- Splash of water
In a sauce pot combine blueberries and a splash of water. Turn to medium heat, cook, and stir until fruit falls apart. Strain blueberries from liquid, pressing berries with a spatula to separate it from solids. Use fruit solids for baking. Return sauce to pot and bring to a simmer. Add honey in increments and cook down to desired thickness. Funnel sauce into jar. Label and store in fridge for up to three weeks.
