Beet & Sweet Potato Cutlets
The recipe for these colorful vegetable patties was submitted by Meenakshi Tripathy for the 2016 Love My Plate Recipe Contest, August, 2016.

• 2 large beetroot, finely grated
• 2 large carrots, finely grated
• 2 large sweet potatoes, peeled, boiled, mashed
• Fresh chopped cilantro
• 1 medium finely grated onion
• Small knob of grated ginger
• 3 cloves garlic, chopped
• Garam Masala
• Bread Crumbs
• Egg white for binding
In a mixing bowl mash the boiled sweet potato. Microwave the grated vegetables for 2-3 minutes. In a little oil, fry the onions, ginger and garlic.Add the grated veggies and the boiled mashed sweet potatoes, cilantro and the garam masala. Add salt. This mixture should now have a consistency of a dough that you can roll into patties. Allow to cool.
Make oval patties. Dip in the egg white, roll in bread crumbs and shallow fry in a pan with oil. Serve warm.
