Apple Plum Cake
Amaze your friends with this autumn dessert!
• 2 gala apples, sliced lengthwise
• 1 medium plum, sliced lengthwise
• 1/2 scant cup almond flour
• 1/2 heaping cup brown rice flour
• 1 teaspoon baking powder
• 1 1/2 small bananas
• 1 tablespoon lemon juice
• 1/4 cup coconut oil
• 2 eggs
• 1/2 cup coconut sugar
• 1 teaspoon cinnamon
• 1/2 teaspoon salt
• Honey to drizzle
• Thyme to garnish, or add 1/2 teaspoon into batter
Preheat oven to 350°. Combine almond flour, brown rice flour, salt, baking soda, sugar and cinnamon. Mash banana and combine with melted coconut oil and eggs. Mix together. Combine dry and wet ingredients and mix well.
Grease an 8-inch round baking pan and pour batter inside. Arrange fruit on top, squeeze lemon juice on top and sprinkle a bit of sugar. Bake for 30 minutes. Remove from oven, carefully remove from pan, and place on drying rack. Let slightly cool then drizzle honey on top. Serve and enjoy!
