Beets are round and bulbous in shape, and come in a variety of colors from deep purple-red, to a creamy white. This root veggie turns buttery and sweet with an earthy taste when cooked, and is high in folate, potassium, copper, and fiber.

The Lowdown

    Deep Red, Golden Yellow, Creamy White
  • Select
    Skin should be smooth, unbruised, and unwrinkled. Smaller beets are a bit sweeter than larger ones. If their greens are still attached they should not be wilted.
  • Store
    Do not wash before storing. Refrigerate in a plastic bag with most of the air removed. They should stay fresh for about two weeks.
